Guava Pineapple cake

Ingredients:

  • Lime Zest
  • 12 eggs
  • Pineapple Juice
  • Self raising Flour
  • Vanilla Extract
  • Pan spray for baking (optional)
  • Whipping Cream
  • Food color
  • Guava Paste

Directions 

  • Add cubes of butter to a stand mixer with sugar and mix
  • Add lemon zest 
  • Divide 12 egg yoke from the eggs and add one by 1 keep the mixer running for 5 mins after the last egg
  • Beat the egg whites for 5-7 mins
  • Add Self raising flour along with pineapple juice alternatively for 2 mins 
  •  Stop the mixer bring the bowl out 
  • Add the beaten egg whites to the bowl and mix with a spoon 
  • Add Vanilla extract continue to mix 
  • Greece the cake pan with butter or Baking spray 
  •  Add the mix to the pans and keep it in the oven for 35-40 mins at 350ᵒ F
  •  Boil the guava paste with 1/4 cup of water till the paste dissolves and put it between the 2 cakes before stacking them 
  • Get your frosting ready. I have used Rich whip hold label non-dairy frosting. You can choose any frosting you like 
  • then take a little frosting on the side add some color and use that to decorate the cake
